This is a full chicken, butterflied/flattened and laid in a bed of sliced lemons, garlic
cloves, onions and herbs. This technique keeps the chicken moist as it soaks in
all the flavours and juices as it roasts, served with roasted potatoes that have sucked up all the chicken drippings. Don’t be afraid to eat the lemon peel and garlic, they’re delicious after being roasted!
